Ingredients:
1 1/2 pounds lean ground beef
1 tablespoon butter
2 tablespoons olive oil
2 onions, peeled and chopped
3 cloves of garlic, minced
3 chopped tomatoes, drained through a sieve
1 tablespoon Herbes de Provence (if you don't have this mixture of herbs, substitute 1 teaspoon dried thyme, 1 teaspoon dried basil, and 1 teaspoon oregano or another combination of dried herbs) salt, pepper
1 egg yolk
2 tablespoons Parmesan cheese
4 - 5 cups mashed potatoes
3/4 cup grated Gruyere cheese
Preparation:
Preheat oven to 400° F.
Brown the ground beef in a large skillet on medium heat. When done, remove from the meat from the skillet and drain off any liquid.
In the same skillet, heat the olive oil and butter until it melts. Add the onions and garlic and cook on medium heat for 5 minutes, or until soft.
Stir in the tomatoes, ground beef, herbs, salt and pepper. Cook just until heated thorough. Remove from the heat and add egg yolk and Parmesan cheese.
Stir to mix completely.
Spread this mixture in the bottom of a lightly oiled 2 -1/2 quart casserole dish. Spread the mashed potatoes on top of this and finish by sprinkling on the grated cheese.
Brown in 400° F oven for 15 to 20 minutes.
Makes 8 servings.
