Beer Onion Soup

Serves 6 Persons
Preparation: 10 minutes – Cooking time: 40 minutes.
Ingredients:
8 oz onions, shopped
2 oz (1/2 cup) all purpose flour
3 oz Gruyere cheese
2 oz butter
25 fl. oz (3 cups) chicken broth
25 fl. oz (3 cups) Weiss beer
6 slices bread
Salt (sea salt) and ground black pepper
Preparation:
Heat the butter in a deep pan and cook the onions until golden. Add the flour, stir and cook for a few minutes. Cover with the broth and beer and stir to dissolve the flour. Add salt and pepper and simmer for 30 minutes. Toast the bread and place it in the faitout or individual casseroles. Arrange the cheese on the bread and pour the cooked soup over the bread. Broil in the oven until crusty and serve immediately.
